Since arriving in Ghana, we have had the opportunity to meet incredible people, traverse dynamic landscapes, and also try some tasty local dishes. Below are some of the meals that we will surely miss back in Canada.
Fruit Platter Breakfast
The All Nations University prepares a colourful and diverse plate of fruit consisting of bananas, pineapples, papaya, and mango.
Fried Rice, Chicken, and Cabbage Salad
This combination is a classic that is always available at the school cafeteria.
FuFu
FuFu is a local dish that is made of flour, bananas, and beans. This mixture is placed and served with soup- often goat soup or light vegetable soup. Fufu is meant to be eaten with one's hands and the texture is soft enough to be chewed or swallowed directly.
Yams and Palava Sauce
This dish is a personal favourite of mine. Palava is a flavourful, moderately spicy sauce base used to cook scrambled eggs with another leafy vegatable (the leaves of a yam plant are used in this photo). It is served with either rice or yams that absorb the sauce well.
Fruit Salad with Chocolate spread on Bread
Fruits are an affordable snack that are abundant in Ghanaian markets. Their sweetness and citrus balance the heavy, whole-grain bread topped with a bitter chocolate spread.
Kenkey
Kenkey is unique local drink made of corn, bananas, sugar, and milk. These ingredients are fermented together, resulting in a sweet and sour taste, similar to a liquid sour dough. Beware- this drink must be consumed quickly upon opening. If left sitting, the liquid will make the bottle explode.
